Introduction
These are delicious and wholesome! As well as very filling! I have it figured with sweetened Cinnamon applesauce because thats what I had on hand but you can opt out for unsweetened applesauce if you would like. These are delicious and wholesome! Ingredients

1 1/2 Cup whole wheat flour,
1/2 Cup toasted wheat germ,
2 tsp baking powder,
1/2 tsp baking soda,
1/2 tsp salt,
1 Tbs cinnamon,
1 Cup cinnamon applesauce,
1/2 Cup liquid egg substitute (Egg beaters),
1 Tbs of vanilla extract,
1 cup of honey
2 Cups of grated carrots,
1 Cup of chopped apple,
1 Cup of packed raisins,
1/2 Cup of chopped walnuts,
2 Tbs oats
2 Tbs brown sugar
Directions
1. Preheat oven to 375 degrees F (190 degrees C). Lightly oil 18 muffin cups with nonstick cooking spray or you could use muffin papers also whatever works
2. In a medium bowl, whisk together egg substitute applesauce and vanilla and honey.
3. In a large bowl, stir together flours, wheat germ, cinnamon, baking powder, baking soda and salt. Stir in carrots, apples, walnuts and raisins. Stir in applesauce mixture until just moistened. Spoon the batter into the prepared muffin cups, filling them about 3/4 full.
4. Mix the oatmeal and brown sugar together and sprinkle evenly over each muffin
5. Bake at 375 degrees F (190 degrees C) for 15 to 20 minutes, or until the tops are golden and spring back when lightly pressed.

These were great! I didn't add walnuts and next time I will use unsweetened applesauce and less honey (the natural sweetness in the carrots and apples really carries through). I also opted for 2 eggs rather than egg beaters. My fam wasn't a huge fan of apple chunks, so I'll shred those next time. - 1/31/11
