Known in the American North East as American Chop Suey and in New York as "Goulash", this is a regional favorite of home chefs and lunch ladies. Ingredients

1.83 lb 90% ground beef
.5 large onion, diced
1 tbsp olive oil
1 green bell pepper, diced
1 tbsp italian herbs
2 tsp crushed garlic
1 can tomato paste
1 lg (28 oz) can diced tomatoes
12 oz whole wheat elbow pasta
Salt and red or black pepper to taste
Directions
Start water for pasta
Cook onion in olive oil until slightly golden
Add beef, brown
Add herbs, garlic and green pepper, cook 3 minutes
Add pasta to water when boiling
Add tomato paste and tomatoes, cook for another 5-15 minutes as preferred
Combine cooked sauce with drained pasta, mix
Serves 8
