this is a great desert for gluten free diets and stage 2 candida diet

you can use what ever fruit you desier, and for those who can have a tad bit of sweetness, you can top it with a little cool whip.

you can use what ever fruit you desier, and for those who can have a tad bit of sweetness, you can top it with a little cool whip.

Number of Servings: 8

Ingredients

    1/2 block firm tofu
    1/4 cup almond milk
    2 bananas
    6 slices of pineapple
    3 eggs

Directions

blend egg, tofu and almond milk in blender till smooth

spray a 9 inch pie pan with cooking spray

pre heat oven to 350

pour mixture in pie pan

place pineapple rings in pan and push down into liquid mixture

slice bananas and place on top of mixture, then push down so that they are all covered

sprinkle a little cinnamon and nutmeg on top for a bit of flavor and color (optional)

bake for 60 minutes, untill top is golden brown and a tooth pick comes out clean

let cool for 15 minutes before cutting in to 8 slices
