Introduction
I found this recipe in a Low Carb cook book and added beans and tomatoes to it to add something further for "stick with you" type of meal. Ingredients

1 Tbsp. Extra Light Olive Oil
1 medium onion, chopped
1 medium green pepper, chopped
2 lbs lean ground beef
2 Tbsp chili powder
1/2 tsp ground cumin
1/2 tsp salt
1 can red kidney beans, drained and rinsed
1 can northern white beans, drained and rinsed
1 small can green chilies, diced
1 1/2 cups water (to make the chili more liquidy)
2 cans diced tomatoes
1 jar (10 oz) Francesco Rinaldi Garden vegetable pasta sauce
optional - 1 cup shredded cheddar cheese
Directions
makes 14-15 1 cup servings
using the olive oil take the onion and green peppers and cook until softened. Add the meat and cook until brown. Drain meat and add to a large cooking pot. Mix rest of ingredients but cheese in and cook until beans are soft and the rest is heated through. Serve with cheese or without. Great for one pot meal for a week for 2 people. I would think it would freeze well.
