Introduction

Ingredients

    15-oz Cooked Salmon or 2 (7½-oz) Cans Salmon, Drained
    1 Onion, Diced
    1 Carrot, Peeled and Diced
    1 Celery Stalk, Diced
    3 Cloves Garlic, Minced
    6 Tablespoons Fresh Parsley or 2 Tablespoons Dried
    3 Eggs
    ¼ Teaspoon Paprika
    ¼ Teaspoon Cayenne Pepper
    Unrefined Sea Salt to Taste

Directions

Heat the oil in a pan, and fry the onions, carrots, celery and garlic.

Mix together vegetables, parsley, paprika, cayenne pepper, salmon and eggs until well blended.

Form 8 patties and gently fry them in a tablespoon or so of oil, gently turning them when one side is done. Alternately, broil for 3-4 minutes per side.

Serve warm.

It serves 4 as a main course, with two cakes per person.
