Ingredients

    3 large croutons (crumbled)
    1/2 t Dijon mustard
    10 fresh spinach leaves
    1 large egg
    1 clove garlic (chopped)

Directions

Add enough water to deep large nonstick skillet to cover bottom. Add spinach; toss over high heat to wilt, about 2 minutes. Drain out excess water, add garlic and mustard.

Spray reserved skillet with cooking spray over medium-high heat. Crack egg into skillet. Fry until white is cooked through, 3 to 4 minutes. Plate the spinach and top with egg and crumbled croutons and season with salt and pepper.
