Ingredients

26 oz potatoes, cubed (about 5 medium potatoes)
30 ounces boneless chicken breast, cleaned and cut into cubes
1 tablespoon olive oil
1 large onion, chopped
1 teaspoon minced garlic
2 jalapenos, seeded and minced
1 tsp curry powder
1/2 teaspoon ground cumin
1/4 teaspoon ground black pepper
1/2 teaspoon salt
1 cup water
1/2 lime, juice squeezed
1 tablespoon fresh parsley, chopped
Directions
Prepare chicken and potatoes as directed. Set aside in individual bowls.
Heat olive oil in large heavy bottom pan. Add onions and saute over medium heat until soft, about 6-8 minutes. Add garlic and jalapenos and cook until fragrant, about 1 minute. Add curry powder, cumin, black pepper and salt, stir to coat.
Add chicken to the pan, stir for about 1 minute. Next stir in potatoes and add 1 cup of water. Bring to a boil, cover and cook over low-medium heat for 15 minutes, opening cover to stir occasionally and ensure nothing is sticking to bottom of pan.
Finish by stirring in lime juice and the tablespoon of chopped parsley.
