Introduction

Inspired by Hungry Girl, using what I had in the fridge. Inspired by Hungry Girl, using what I had in the fridge.
Number of Servings: 8

Ingredients

    2 C water
    1 knorr beef boullion cube (10 g)
    4 cloves garlic, crushed
    2 T soy sauce
    2 T corn starch

    1 3/4 lbs beef bottom round, sliced in 1/2" X 1/2" strips
    4 C fresh broccoli, chopped
    1 C green peppers, sliced
    1 large sweet onion, cut in quarters and sliced

    salt to taste (optional. I did not need extra salt)

Directions

Dissolve boullion into water. (I find it easiest to warm water with boullion in micro). Add next 3 ingredients. Stir to mix. Pour marinade over beef strips in a large container (to hold all). Marinade beef for 20-30 minutes in fridge (though I did mine on the counter). After about 20 minutes, spray skillet with non-stick cooking spray. Add veggies and cook til broccoli is bright green (about 3-5 minutes). Add beef and marinade and cook over medium heat, covered until beef is cooked through and sauce thickens. About 3-5 minutes.

Makes 8 1-Cup servings. Serve over brown rice (not included in nutritional facts)

    Incredible!
    This came out so awesome but I must say I tweaked it a bit. I didn't have corn starch so I used flour and didn't have soy sauce so used teriyaki....came out great. - 2/24/13
