    4 skinless chicken breast
    1 cup of sliced almonds
    1 cup of apples
    1 tsp pepper
    1 tbsp of butter (lite)
    2 tbsp of melted butter (lite)


In a large pot, bring 8 cups of water to boil.
Add chicken breasts and bring to a boil.
Cover and let simmer for 5 mins.
Season with pepper and 1 tbsp butter.
Remove chicken from pot and place on cutting board.
Let cool for 3 mins.
Preheat oven at 350* F.
Slice a horizontal hole halfway through the chicken (do not slice chicken breast completely open).
In a bowl combine melted butter, apples, almonds; stir until all is covered with butter.
Stuff apple and nut mixture into chicken and bake for 10 mins on baking rack.
Serve with aspargus.

  • Just made this recipe. Followed all the instructions. Chicken took 20 minutes not 10. It was very bland and quite honestly I couldn't finish it. :-( - 9/24/13

  • This was very good. Only change I made was to add cranberry's to the apple mixture. My boyfriend loved it. He loved it so much he actually asked if there was leftovers he could take for lunch the next day. Definite two thumbs up - 3/5/08
