easy to freeze for later. I love this for quick lunch or dinners right from the freezer.heat oil and cook onions until quite well cooked, add leeks part way through over medium-low heat (approx 10 minutes full cook time). Add everything else and simmer for 45-60 minutes until everything is cooked.
