La Victoria Enchilada Sauce 10oz, 2.5 cup
Stater Bros Mexican Style 3 Cheese Blend, 112 gram(s)
La Tortilla Factory Smart & Delicious Low Carb, High Fiber Tortilla - Small, 6 serving
Sabra Frozen Chopped Cilantro Cubes, 1cube, 1 serving
white pearl onions chopped, 6 servings
Chicken, Costco Kirkland Signature Rotisserie Chicken White Meat Skin Removed, 10 oz
Directions
Remove chicken from rotisserie bones and shred.
Add chicken bits into a mixing bowl or Tupperware container and mix in 1/4 cup of enchilada sauce, onions, and cilantro.
Evenly distribute the chicken/sauce mixture onto your six tortillas (about 2 ounces of chicken per tortilla.)
Sprinkle on 1/8 cup of shredded cheese into each tortilla, roll 'em up and place into a casserole dish.
Dump the remaining enchilada sauce over each of the enchiladas.
Top each enchilada with 1/8 cup of shredded cheese.
Bake at 400 degrees for approximately 10 minutes (or until golden brown) ENJOY!

This was pretty decent - there are a few changes I made (mainly to get vs additional fiber, but the original recipe is good):
- High fiber tortilla wrap
- black beans
- cooked the onions (lessens bite)
