Introduction

This is a variation on the classic WW zero-point veggie soup, made with low-sodium V8 juice as a base instead of broth. I didn't have any green beans or zucchini so I used celery instead, but you can use any non-starchy vegetable. Ingredients

    Cabbage, fresh, 1.50 cup, chopped (packaged cole slaw works great)
    Carrots, raw, 3/4 cup, chopped
    Celery, raw, 1 cup, diced
    Garlic, 2 cloves, minced
    Onions, raw, 0.50 cup, chopped
    V8 Vegetable Juice, Low Sodium, 3 cups
    1 tsp Italian seasoning
    1/4 tsp black pepper

Directions

Add all ingredients to medium size pot. Bring to a boil, then lower heat to medium low and simmer until vegetables are soft (est. 30 min.)
