A wonderfully delicious soup that can be doubled or tripled and frozen in one cup servings for a quick and healthy meal!

Number of Servings: 8

Ingredients

    1 cup diced onion
    1 clove garlic, minced
    1/2 cup chopped celery
    3 cups chicken broth
    2 bunches broccoli
    2 medium peeled, cubed potatoes
    1 cup 1% milk
    1 cup shredded low fat cheddar cheese
    1/2 tsp ground thyme
    1/2 tsp ground black pepper
    1/2 tsp Worcestershire sauce

Directions

Saute onions, garlic and celery in olive oil until soft.

Add 1 1/2 to 2c chicken broth; bring to a boil.

Add cubed potatoes and broccoli florets. Cover, reduce heat and simmer until potatoes are soft.

Use immersion blender to puree

Stir in milk. If soup seems thick, add more chicken broth to reach desired cosistency. (You can also add more milk for more creaminess if desired--which will change the nutrional info a bit)

Stir in shredded cheese until melted and season with spices and Worchestershire sauce.

Makes approximately 8 cups

    Not as thick and creamy as I had hoped. Perhaps more cheese would help. - 2/20/11

    Try using less chicken stock at first and add more if needed. Mine is always thick and creamy.
