Number of Servings: 5

Ingredients

    Salad:
    1 C. Red quinoa
    1 can black beans, drained and rinsed
    1 red pepper, chopped
    1/4 C fresh cilantro, finely chopped
    2 green onions, chopped
    1 can whole kernal corn
    1 sm. avocado, chopped into 1" pieces

    Dressing:
    4-5 T fresh lime juice (2 sm limes)
    1/2 t kosher salt, or to taste
    1/2 t ground black pepper
    1 garlic clove, minced
    1/4 C fresh cilantro, finely chopped
    1/4 C extra virgin olive oil
    1/2 t ground cumin

Directions

Yields 5 1-cup servings
Cook quinoa according to package
prepare the chopped vegetables
Allow quinoa to cool for 5 min. then fluff with fork. Add beans and vegetables and toss well.
Prepare dressing and drizzle over salad.
Serve and room temperature

    Incredible!
    Really delicious and quick to make. Made without avocado so it kept well in fridge for a few days. Does anyone know how long it stays fresh with the avocado in it? - 11/17/13

    Thanks for entering this - love it and love OSG! Had trouble finding red quinoa here in Germany, tho! So am using a mix of grains that includes it. - 1/13/12
