Ingredients

    2 1/2 C flour
    2 C sugar
    1/2 C whole wheat flour
    1 1/2 tsp baking powder
    1/2 tsp cinnamon
    1 tsp salt
    1/2 tsp baking soda
    1/2 tsp nutmeg
    1 egg
    3/4 C egg substitute
    1 can (15 oz) solid-pack pumpkin
    1/2 C unsweetened applesauce
    1/4 C canola oil
    1 C semisweet chocolate chips

Directions

Combine the first eight ingredients. In another bowl, combine the egg, egg substitute, pumpkin, applesauce and oil; stir into dry ingredients just until moistened. Stir in chocolate chips. Coat muffin cups with nonstick cooking spray; fill 2/3 full with batter. Bake at 400* for 18-22 minutes
