Introduction
Tried to make Tuscan soup and this was the result. Since I didn't have sausage, and I added some veggies. You can add beans if you want to turn this into a vegetarian dish. Ingredients
-
-2 Chicken breasts
-1 14 OZ Stewed tomatoes (w/Italian seasoning)
-1 can FF carnation evaporated milk
-2 Large celery stalks
-1 cup frozen yellow corn kernels
-1 medium onion
-3 Medium potatoes
-Italian seasoning, salt and pepper to taste.
Directions
-Fill a pot with 10 cups water, chop onions and add to pot. Allow water and onions to come to a boil.
-Slice your chicken into thin pieces and add to boiling water.
-Once chicken is no longer pink add your tomatoes, evaporated milk and spices.
-allow to come to a boil again then add cubed potatoes.
-after 5 min add sliced celery, and cook for 5 more min.
-once potatoes are soft add frozen corn mix and turn off heat.
-soup will thicken after the potatoes are added.
