Ingredients

    Ingredients:
    Milk, nonfat, 2 cup
    Helios kefir organic plain 2% reduced fat 1 cp (236mL), 1 serving
    Butter, unsalted, 2 tbsp
    Onions, raw, 1 cup, chopped
    Garlic, 3 cloves
    Cumin seed, .5 tsp
    Oregano, ground, .5 tsp
    Chicken Broth, 8 cup (8 fl oz)
    Chicken Breast, no skin, 8 ounces
    Yams, 3 cup, cubes
    Yellow Sweet Corn, Frozen, 3 cup kernels
    Marie Callender's Original Corn Bread Mix, 6.25 serving

Directions

Mix Milk, Kefir and Muffin mix in a bowl until well blended. Meanwhile, heat butter in large pot over medium heat until foaming. Add onion and cook until softened, about 8 minutes. Stir in garlic, cumin, and oregano and cook until fragrant, about 4 min. Add broth, chicken (raw) and sweet potatoes. Bring to a boil, reduce heat and simmer until chicken is cooked and sweet potatoes are just tender, about 8 min. Stir in Milk, Kefir and Muffin mixture and simmer until soup thickens ( can take up to 10 min ) Add corn and cook for additional 2 to 3 min. Stir in Parsley and season with salt and pepper to taste. Makes 8, 2 Cup servings
