* Olive Oil, 1 tbsp
* Garlic, 2 cloves chopped
* Chicken Breast, no skin, 6 ounces cut into bite size pieces
* Spinach, fresh, 5 cup
* Butter, salted, 2 tbsp
* Flour, white, 2 tbsp
* Milk, 1%, 1 cup
* Onion powder, 1 tsp
* Garlic powder, 1 tsp
* Iodized Salt, 0.25 tsp
* Pepper, black, 1 tsp
* Nutmeg, ground, dash
Directions
Makes 4 servings, about 1/2 cup each.
Heat large skillet over medium to medium high heat. Pour in olive oil and garlic. Saute 30 sec until fragrant. Add chicken, and a dash salt and pepper. Saute until cooked. Add spinach, stir until wilted. Pour chicken and spinach mixture into a bowl and set aside.
Melt butter in same skillet. Add flour and stir until smooth. Add milk, and rest of ingredients. Stir until creamy and thickened.
Add back chicken mixture and stir until warmed and combined. Serve with rice or pasta (not in nutrition info.)
