Introduction

I first made these muffins when on Weight Watchers. I changed the recipe and added the bananas which make them moist and sweet. They keep well in the Frig. Ingredients

    1C. Oat Bran
    1/4 C. brown sugar
    1/3 C. walnuts
    2 tsp. Baking Powder
    1/2 tsp. Baking Soda
    1/2 tsp. salt
    Dash each Cinnamon and Nutmeg

    1 C. (about 2 medium-large) Bananas
    1 C. Buttermilk
    1 large egg
    1 Tbsp olive oil.

Directions

Preheat oven to 425 degrees. Mix dry ingredients together first. Mix liquid ingredients together and add to dry all at once. Mix only until well moistened. Bake in lined muffin tin. Makes 12 muffins. Enjoy!!
