Introduction

I haven't tied this recipe yet since I just made it up, but hopefully it'll be good :-) I haven't tied this recipe yet since I just made it up, but hopefully it'll be good :-)
Number of Servings: 1

Ingredients

    1 small 4" whole wheat pita
    1/4 cup marinara sauce
    2 oz mozzarella cheese, sliced thin
    3 oz grilled chicken breast, sliced thin
    1/4 cup roasted red peppers (best if you roast them yourself rather than buy them in a jar)
    1/2 Tbsp olive oil
    2 Tbsp fresh basil, roughly chopped

Directions

Heat oven to 350 degrees F.

Brush pita with olive oil, all the way to edge. Spread marinara sauce over pita leaving 1/4 inch border. Arrange mozzarella, chicken, and peppers on pita.

Bake pita until mozzarella is melted and everything is heated through.

Remove from even and sprinkle with fresh basil.

Makes 1 serving.
