Ingredients

    1 Box Manicotti, 8 oz
    Ground beef, extra lean, 16 oz
    Refried Beans, Rosarita Spicy Jalapeno, 1.75 cup
    Cheddar Cheese, 3 oz
    Salsa, Medium, Cascade Pride 28g, 24 oz
    Lindsay Sliced Black Olives, 8 tbsp
    1 Cup Chopped onions
    Taco seasoning 1 packet or to taste

Directions

I cook one box of manicotti noodles and brown beef with onions. I add taco seasoning but use less water then recommended on the packet. I personally use 2 packets (might be a little strong for some). Mix beef with refried beans and 2/3rd cheese. Stuff shells and cover with Salsa, remaining cheese and olives. Bake at 350 for 30 minutes and another 10 or 15 at 400 to brown top.

Makes about 6 servings. To reduce fat use ground turkey or chicken. Reduced fat cheese also works well.

    Very Good
    This was super good. Even my hubby liked it. I didn't have salsa, so I used Salsa Verde. Yum! Definitely will make this again. - 2/18/11
