Ingredients
-
3 medium ripe bananas
1 egg
1/4 cup canola oil
1/2 cup sugar
1 cup peanut flour (I used the flour from Trader Joe's)
1 cup all-purpose flour
3/4 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
pinch of ground ginger
1/2 teaspoon kosher salt
3/4 cup chocolate chips
Directions
Preheat oven to 350°F. Grease a loaf pan.
Whisk together bananas, the egg, oil, and sugar in a large mixing bowl. In a medium bowl, combine flours, baking soda, spices, and salt. Add dry mixture to wet mixture, and stir to combine. Fold in chocolate chips.
Spread batter in loaf pan and bake for 35-40 minutes, or until a tester inserted in the center comes out clean. Cool completely before serving.
