Introduction
This is the basis for making an old family favorite from my Sicilian side. You have to add Spaghetti Sauce to complete the meal, which is a separate recipe. Ingredients

4 oz. (4 slices) slab bacon, cooked crisp and crumbled. (The original recipe called for twice the amount of bacon, which is really good, but.. hey...I'm trying to ditch a bit of fat and soduim, and it was really fine with this amount. Sorry Grandma).
2 Potatoes, peeled and sliced thin
1 Can of peas, rinsed and drained
8 oz. Gluten free elbow macaroni, cooked and drained
2 T Grated parmesan cheese
*Add desired amount of spaghetti sauce to complete this recipe! I used 3 cups of sauce.
Directions
Prepare spaghetti sauce (separate recipe or use your own. We always used a marinara or meatless sauce with this dish).
*HELPFUL HINT* Put a pan of water on to boil for your pasta while your prepare the other ingredients.
Fry 4 oz. (4 slices) bacon till very crisp, drain well, crumble, and set aside
Peel 2 potatoes and slice thin. Fry (eegads...really?) in bacon grease, remove from pan and drain well.
Rinse and drain one can of peas (about 1 1/2 cups)
Cook pasta per package instructions and drain well. (Don't rinse or add oil -- ever -- lol!)
Put hot pasta in bowl and add bacon, potato, peas, and parmesan cheese. Pour about 3 cups of spaghetti sauce into the mix and stir until thoroughly incorporated. You may want to add additional cheese or sauce, according to your own personal taste. We always served this in a bowl, but I put it in a baking dish to bring to a friend. It is not pretty, but boy is it good! Very hearty!
Due to limitations of the Recipe Calculator, myself, or both, you'll have to add the sauce separately in your tracker. I couldn't add a portion of one of my recipes to another. Sorry for the inconvenience, but I wanted the nutritional information to be right, and I never cook just 3 cups of sauce! And why isn't "pasta" a main category?
