Introduction
YUMMY Easy Breakfast Burritos! YUMMY Easy Breakfast Burritos!Number of Servings: 2
Ingredients

2 eggs
4 tbsp salsa
2 mushrooms (diced)
2 med tomatillos or tomatoes (diced)
1/4 C Sweet Onion (diced)
1 tbsp Macadamia Nut Oil (chili flavored)
2 Tortillas (6 inch)
Directions
Makes 2 Burritos (6 inch tortillas)
The Fillings:
In a medium frying pan on medium heat, saute onions in 1/2 tbsp chili mac nut oil until soft.
add mushrooms and tomatllos and cook for another few minutes.
Remove from heat and empty into a small bowl.
The Tortillas:
Use the same frying pan (now empty).
place tortilla in pan and cook on med heat.
flip when tortilla starts to get air pockets or when the underside is lightly browned.
cook the other side, then remove from heat.
cook second tortilla.
The Omelet:
In a small bowl, mix 2 eggs and 2tbsp salsa. whisk with fork until egg is well blended.
Heat 1/2 tbsp of chili mac nut oil in the pan.
Pour in the eggs evenly over frying surface.
When egg is about half cooked, add filling over half the pan.
Cook a little bit more, then flip egg over top of filling.
Cut omelet in half and place one piece on each tortilla.
Serve with a tbsp of salsa.
