Introduction

I found an absolutely scrumptious looking Mac and Cheese recipe in a cookbook that I took and made into a low fat, high protein version made with whole grain pasta.

My husband said it was excellant before I told him what was in it, then was amazed at it being actually healthy for him!

Original recipe:485 calories, 29 g fat
My version: 307 calories, 9.7 g fat, 16.7 protein

served with a side of sauteed kale and topped with a few carmelized onions for delicious meal!

Ingredients

    1 lb box of Barilla whole grain penne pasta
    2 cups fat free half and half
    12 oz can fat free evaporated milk
    1/2 cup milk 1%
    1/2 cup sour cream, reduced fat
    2 eggs
    2 tsp flour
    2 tsp salt
    .5 - 1 tsp ground white pepper ( adjust to your taste)
    1/8 tsp cayenne pepper
    pinch of ground nutmeg
    1.5 cups of shredded Fontina Cheese
    3/4 cup of shredded Mozzarella Cheese
    1/2 cup of Italian Bread Crumbs

Directions

Preheat oven to 450, spray 9 x 13 pan
cook pasta as directed, drain and set aside
While pasta cooking, Whisk together the half and half, evaporated milk, sour cream, milk, eggs, flour, peppers, salt, nutmeg

Add in 1 cup of fontina cheese and 1/2 cup mozzarella cheese to above.

Mix cooked penne pasta in to above

pour into prepared pan, top with remaining 1/2 cup fontina and 1/4 cup Mozzarella cheeses. Then sprinkle bread crumbs over top of cheeses

Bake for 30 minutes, until set and knife inserted comes out clean. Let sit for 10 minutes to firm up and then cut into 12 3x3 squares.
