I want to give thanks to GLYNN1 for submitting her recipe. I made my own version, using lighter butter and cottage cheese. Next time though I will be using a bit more cinnamon. Ingredients

    * Knudsen NONFAT Cottage Cheese, 8 oz (remove)
    * Promise active light, 2 tbsp (remove)
    * Eggland's Best Large Egg, 3 serving (remove)
    * Salt, .25 tsp (remove)
    * Cinnamon, ground, .5 tsp (remove)
    * Flour, Unbleached All Purpose, Gold Medal, 0.25 cup

Directions

Blend all the ingredients together. Cook like a regular pancake over a stove in a pan or pancake griddle. Enjoy and fridge/freeze for a quick snack!

Makes 8 1/4 cup-sized pancakes for 2 pancakes per serving (4 servings altogether).
