Ingredients

    1.25 lb beef chuck (stew meat)
    1 T Extra Virgin olive oil
    2 c. onion, chopped
    1 c. carrots, sliced
    1/2 c. celery, sliced
    1 c. mushrooms, canned
    2 cloves garlic, minced
    1/2 t. dried thyme
    14 1/2 oz. beef broth, Swanson fat free, 33% reduced sodium
    14 1/2 oz. chicken broth, Swanson fat free, 33% reduced sodium
    2 c. water
    1/2 c. pearl barley

Directions

Makes about 12 1-cup servings.

In a dutch oven, brown meat in oil.
Set meat aside.
Saute onion, carrot, and celery (about 5 minutes)
Add mushrooms, garlic and thyme. Cook about 3 minutes.
Add broths, water, and barley.
Return meat and bring to a boil.
Simmer, covered for 1 1/2 to 2 hours until meat and barley are tender.
