Introduction

Number of Servings: 4

Ingredients

    1 cup Red Quinoa
    ~0.25 cup chopped onions
    1 tsp olive oil
    1 tsp grated ginger root
    1 tsp curry powder
    1 tsp ground coriander
    1/4 tsp cinnamon
    1/2 cup of frozen peas
    2 cup water

Directions

This makes 4 - 1 cup servings

Saute onion on medium heat in olive oil
Add ginger and Quinoa, stir constantly for ~1minute
Add coriander, curry, and cinnamon
Add ~ 2 c of water
Let simmer for ~15 minutes or until nearly done
Add peas - let cook ~5 minutes until peas are to your liking

Serve warm.

Also, the first time I made this I used a saute pan that I did not have a cover. Quinoa cooks like rice -- preferably make this in a pan you can cover, otherwise you have to keep adding water, like me.
