Ingredients

    5 cups sliced zucchini
    2 large eggs (beaten)
    1/2 cup skim milk
    1 cup white flour (seasoned to taste)
    3 cups light pasta sauce
    1 lbs shredded part skim mozzarella cheese
    5 medium sized ripe tomatoes

Directions

Peel and slice a large Zucchini (aprox. 5 cups)
mix 1/2 cup of milk with egg. Dip zucchini slices into egg bath and then into flour. Spray cookie sheet with cooking spray. Place zucchini on cookie sheet and bake at 350 until soft. Cover the bottom of a 9x13 baking dish with pasta sauce and a layer of zucchini slices. Top with sauce and tomato slices and cheese. Repeat. Last layer should be zucchini. Top with remaining sauce and cheese and bake at 350 for 90 mins. or until sauce and cheese is bubbley.
