Introduction

Ingredients

    1 cup all-purpose flour
    1 cup yellow cornbread
    1/4 cup sugar
    1 Tbsp baking powder
    1/2 tsp salt
    2 egg whites, lightly beaten
    1 cup buttermilk
    1/2 cup unsweetened applesauce

Directions

Preheat oven to 400 degrees. Lightly spray an 8x8x2 inch baking pan and set aside.

In a large bowl, stir together the flour, cornmeal, sugar, baking powder and salt. Make a well in the center of the mixture.

In a small bowl, stir together the egg whites, buttermilk, and applesauce. Add the buttermilk mixture to the flour mixture and stir until just moistened.

Pour the batter into the prepared pan. Bake about 25 minutes or until a toothpick inserted in the center comes out clean. Serve warm.
