Number of Servings: 4

Ingredients

    Serves 4: 1 1/4 lb turkey breast fillet.
    2tbsp plain wholemeal flour.
    1 tbsp olive oil.
    1 medium onion, peeled and cut into
    wedges.
    2-4 garlic cloves peeled and sliced.
    1 large red pepper, deseeded and
    sliced.
    1 tbsp light soy sauce.
    1-2 tsp clear honey.
    1/2 pt red wine.
    1/4 pt chicken stock.
    8oz courgette trimmed and sliced.

Directions

1)Cut the turkey fillet into small bite-size chunks and toss in the flour. Heat the olive oil in a large frying pan and saute the onion and the garlic for 3 mins before adding the turkey and continue to cook for a further 5 mins or until it is sealed.
2) Add the red pepper, the soy sauce and the honey and stir well. Pour in the wine and chicken stock then bring to the boil. Reduce the heat to a simmer, cover with a lid and cook for 10 mins, stirring occasionally. Add the courgettes and continue to cook for a further 10 mins or until the turkey is tender. Serve with sweet potato mash and freshly cooked mixed veg.
