Ingredients

Whole Wheat Lasagna - 6 noodles, cooked
Butternut Squash, 2 1/2 cup, cubes, boiled, drained & mashed
Brummel & Brown, 1 Tbsp
Onions, raw, 1/2 cup, chopped
Spinach, fresh, 5 oz.
Garlic, 2 cloves, minced
Ricotta Cheese, part skim milk, 3/4 cup
Salt & Pepper to Taste
Laughing Cow Light Creamy Swiss 2 wedges
Milk, nonfat, 1/4 cup
Brummel & Brown, 1 Tbsp
Parmesan Cheese, grated, 1/4 cup
Red Pepper Flakes (to taste)
2% mozzarella cheese, 1/3 cup
Directions
1. Heat 1 tbsp Brummel & Brown in large skillet, saute onion until soft, add garlic; then add spinach in batches until wilted. Remove from heat and set aside.
2. Preheat oven to 350 degrees, spray a 8x6 casserole dish with nonstick spray, set aside.
2. Combine butternut squash mash, onion and spinach mixture, ricotta, salt & pepper. Mix well.
3. Lay out lasagna noodle and top with butternut squash mixture and roll up. Place side by side in casserole dish.
4. Combine remaining ingredients (except mozarella cheese) in a small saucepan and cook over medium-high heat until all the cheese has melted and mixture has thickened slightly. Pour over lasagna roll ups.
5. Top with mozzarella cheese, cover with foil and bake for 25 minutes. Remove foil and bake for an additional 5-10 minutes until top browns.
