Introduction
Absolutely simple to make - pureed cauliflower plus bullion. Comes out velvety smooth and rich tasting. Use instead of "cream of" whatever soup. Just add your favorite extras (chicken, celery, mushrooms, etc) to have a low fat, low carb version of your favorite cream of whatever soup. Ingredients

1 large or 2 small heads cauliflower, rough chopped
8 cups water
2 Knorr bullion cubes (1 chicken, 1 vegetable, or 2 of same)
Directions
add water, bullion, chopped cauliflower to soup pot.
Boil till cauliflower is soft
Use hand blender to blend until velvety smooth.
Serve as is or as a base for other "cream of" soups.
Makes 6 12 oz servings.
Suggested additions include:
- Sauteed leeks and bacon bits
- Chicken breast, shredded +/- sauteed celery, onions, carrots
- Wild mushrooms sauteed w/ butter, white wine, sprinkle with fresh (or dried) thyme or parsley.
- Asparagus, +/- diced canadian bacon or ham, dash nutmeg
- Chicken, corn, diced green chiles, diced tomato, cumin
- Bay scallops, bacon bits, green onion, cracked pepper, basil
