Ingredients

    2 (15-ounce) cans chickpeas, rinsed
    1/2 small red onion, minced
    1/2 large cucumber, peeled, halved length-wise, seeded
    1/4 cup minced fresh mint
    1/4 cup crumbled feta cheese
    1 T minced fresh parsley
    3 T fresh lemon juice
    2 T minced pitted Kalamata olives
    1 T Dijon mustard
    1 T extra-virgin olive oil
    1 small garlic clove, minced
    salt and pepper to taste (not included in ingredient calculation)

Directions

Toss the chickpeas, onion, cucumber, mint, feta, and parsley together in a large bowl.

In a separate bowl, whisk the lemon juice, olives, mustard, oil, and garlic together, then pour over the chickpea mixture and toss to coat.

Season with salt and pepper to taste and serve.

Makes approximately 8-9, 1/2 cup servings.
