Egg, fresh, 2 large
Serrano Peppers, 1 pepper
Red Ripe Tomatoes, 1/4 of med tomato, diced
Onions, raw, 1 tbsp chopped
Mushrooms, fresh, 4 medium, sliced
Swiss Cheese, 1 slice (1 oz)
Pepper, black, 1 dash
Butter, salted, 1 pat (1" sq, 1/3" high)
Salt, 1 dash
Directions
Sautee fresh vegetables in 1 pat butter with salt and pepper to taste. Once cooked to liking, set aside.
Whisk two fresh eggs with water until lemon yellow in color and pour into pan used to sautee vegetables.
Add vegetables to one half of your omelet. Allow to cook until eggs start to harden. Fold 1/2 of omelet over on top of sauteed vegetables.
Top with swiss cheese, allow to cook until eggs are thoroughly done and cheese is melted.
