Introduction

I like to make these ahead and warm up to take for a dish to pass - everyone raves over them! I like to make these ahead and warm up to take for a dish to pass - everyone raves over them!
Number of Servings: 22

Ingredients

    22 medium mini bella mushrooms (2 packages fresh)
    1/4 C minced yellow onion
    2 C fresh baby spinach (wilted, then minced)
    1/8 C minced sweet red pepper
    2 tsp minced garlic
    1/2 C Italian bread crumbs
    3/4 C grated parmesian cheese
    Onion powder, onion salt, and garlic salt to taste


Directions

Pre-head oven to 400 degrees
Wilt spinach 2 minutes in microwave
Removed stems from mushrooms
Mince spinach, mushroom stems, onion, and red pepper
Add garlic, bread crumbs, and parmesan to veggies
Mix together well and add onion powder and salt to taste
(about .5 tsp onion powder, .25 tsp each onion salt and garlic salt)
Fill mushrooms with mixture - round tops off - you will have a lot of filling to really stuff them full!
Bake 20 minutes at 400 degrees
Makes about 22

    Incredible!
    Everyone raved about them. I used fresh spinach,1 min in microwave, then dried it on paper towels. The mix was dry so I added a little olive oil to make it "sticky" which made it easy to pack the mushrooms. I doubled the recipe, used 30 large mushrooms, and it was the perfect amount of stuffing. - 11/6/11
