Easy to make Imitation Crab or Lobster Pasta Salad. A wonderful appetizer or side that is colorful and full of flavor. This salad can be served as a side or as a wrap on a lettuce leaf. Ingredients

    16 ounces - pasta
    16 ounces - crab or lobster
    3 tablespoons - no calorie sweetener
    2 tablespoons - white vinegar
    3 tablespoons - skim milk
    1/2 cup - Miracle Whip light dressing
    1/2 cup - celery
    1/2 cup - sweet red peppers
    1 cup - green peas
    12 - Lettuce Leaves
    Salt and pepper to taste

Directions

Place green peas in a strainer and set in a warm bowl of water so peas can thaw. Cook pasta according to instructions on package. Set pasta aside to cool. Dice celery and sweet red peppers. Chop crab or lobster into small pieces.

In a large bowl, whisk together the no calorie sweetener, white vinegar, skim milk and Miracle Whip light dressing. Stir in the pasta, crab or lobster, celery, sweet red peppers and peas. Salt and pepper to taste.

Chill prior to serving.

Makes 12 1/2 cup servings.
