Introduction

Ingredients

    1 cup millet flour
    3/4 cup warm water
    a pinch of salt

Directions

Sieve together the millet flour and salt. Add a little water at a time and knead for 2-3 minutes till the dough is smooth and elastic.
Divide the dough into two equal parts. Take one part and roll it into a small ball. Roll the ball into a circle shaping it by gently pressing it in between palms. Alternately use a rolling board or clean polythene sheet, using dry flour to dust as you roll. Roll into 6 inch diameter and dust off any excessive dry flour.
Place the bread on a heated griddle.Roast on both sides while sprinkling water. Flip twice till the bread is crispy and bears brown spots. Makes 2 medium sized breads.

    I consider myself a pretty good cook , I make all kinds of breads and must start using millet and spelt flours as my husband has to be alkaline, This recipe was a flop. Please re look at this and tell me what I may have done wrong. No flavor, dry and brick like :( ?? any ideas? - 5/4/14
