This is my twist on a couscous with chicken recipe I found on SP. This is my twist on a couscous with chicken recipe I found on SP.
Number of Servings: 1


    Couscous: 2 oz dry
    Skinless Chicken Breast: 5.5 to 6oz
    Mushrooms: 2 Cups
    Brocoli: 2 Cups
    Babby Carrots: 10
    Onion, chopped: 1 Cup
    Olive Oil: 1 TBL
    seaons to taste


1) Prepare couscous according to directions
2) Cut chicken into bite size pieces and saute in Olive Oil and remove from skillet leaving excess oil and juices in skillet.
3) Chop all vegetables and saute in same skillet until just tender.
4) Add chicken back into skillet and add cooked couscous.
