Ingredients

    1 onion, halved and thinly sliced
    pinch of coarse sea salt
    1/3 cup orzo uncooked
    1 cup homemade (no sodium) vegetable broth
    1.5 oz. reduced fat feta cheese
    1/4 cup petite peas, thawed
    3 tbsp chopped fresh mint

Directions

Heat a pan over medium heat, spray with cooking spray. Saute the onion with a pinch of coarse sea salt until transparent. Add the orzo and toss to coat. Stir in the vegetable broth. Bring to a boil then reduce to a simmer, cover and cook for 8-10 minutes until the mixture is creamy and the orzo is tender. Stir in the feta, peas and mint. Serves 2.
