Introduction
We usually add Anaheim peppers, whole, to the crockpot. You can chop them also, to release the sweet heat earlier in the cooking. Top with grated Seriously Sharp cheddar cheese and a dollop of sour cream (neither in nutritional info; I like to eat it 'plain'). We usually add Anaheim peppers, whole, to the crockpot. Ingredients
-
95% lean ground beef, browned and drained
15 to 16 oz each of:
Black beans
Anasazi or pinto beans
Blackeyed peas
Dark red kidney beans
2 cups chopped white or red onions
3 cloves of garlic, crushed
4 cups tomato sauce
4 cups chopped fresh tomatoes
2 chopped red bell peppers
3 tbsp chili powder
1 tbsp ground cumin
Directions
Brown your 1 1/2 lbs of 95% lean ground beef, and drain extra fat off. Add the beef to your crockpot.
Add all of the other ingredients.
The Anaheim peppers may be added whole, or they may be chopped for more immediate/integrated sweet heat.
Cook on high for at least 4 hours, or on low all day.
When serving, about 1 1/2 cups = 1 serving; you may want to top it with some shredded sharp cheddar and a dollop of sour cream. Neither are in the nutritional info, since I prefer this chili straight.
