Ingredients

    2 tsp. reg cream cheese (could sub reduced fat)
    1 tsp. pesto sauce
    .5 ounce (about a tablespoon) Sweet Roasted Red Pepper, like Dunbar brand
    1 basil leaf
    6 baby spinach leaves
    2 slices Flax seed or Rye bread (adjust calories accordingly)
    2 slices turkey breast meat
    2 thin slices tomato, cut in half
    4 thin slices cucumber

Directions

1. Puree first four ingredients plus 2 of the spinach leaves and a pinch of salt and pepper in food processor. (This recipe lists the amount of spread for one sandwich, but it may be more practical to make a larger quantity and store in the fridge. Might be good on bagels?)

2. Toast bread slices and coat with red pepper spread.

3. Layer the turkey, tomato, and cucumber on one slice of bread.

4. Sprinkle with fresh ground pepper and top with remaining spinach leaves. Top with other slice of bread.
