Ingredients

    1 T canola oil
    1 cup chopped dehydrated onion
    4 cups water
    1 cup brown lentils
    1/2 T. coriander, ground
    1/2 T. curry powder
    1/2 tsp. ground ginger
    2 medium zucchinis, 1 inch cubes
    *********
    1/2 tsp salt

Directions

Put all ingredients except salt into pressure cooker. Close cover securely. Place pressure regulator on vent pipe and cook 3 minutes with pressure regulator rocking slowly. Let pressure drop of its own accord. Stir in salt.

    I really liked this dish! I questioned the 1 cup of dehydrated onion, so used 1/2 a cup; otherwise, I prepared as directed. I'll make this again! Edited to add: I've made this a number of times now. This winter, I substituted 2 sweet potatoes for the zucchini when the price for zucchini was high. - 9/22/12
