Ingredients

    Two large portabella mushroom caps (6 oz.)

    3/4 tsp. McCormick 25% less sodium Steak Seasoning

    2 T Best Life Buttery Spread w/ Olive Oil

    1 small onion, sliced

    1/4 tsp (or a pinch) of ground thyme

    4 slices of Sargento Reduced Fat Provalone Cheese

    2 - 100% Whole Wheat Natures Own Rounds
    (or Arnold Sandwich Thins)

Directions

Preheat oven to 400 degrees.

Heat a skillet to med-high heat and melt buttery spread. Saute onions, stirring occasionally until they are a caramel color - approximately 15-20 minutes.

While onions are cooking prepare mushroom caps by removing the stem. Lightly spray with an olive oil mist (or cooking spray) on both sides. Sprinkle evenly with steak seasoning and place gill sides down onto a shallow baking dish or baking sheet with sides. Bake for approximately 15 minutes or until the mushrooms start to shrink and release their juice onto the baking sheet.

Remove from oven and flip mushrooms over. Fill each mushroom cap with 1/2 of the carmalized onions. Top each with 2 slices of cheese and place back into the oven. Bake for an additional 5 minutes or until the cheese is melted.

Serve between a toasted thin sandwich bun.

NOTE: Save that juice from the baking sheet - excellent flavor for spaghetti sauce or meatloaf!!!
