Ingredients

    24 oz raw chicken breast
    14.4 oz can no-salt-added diced tomatoes
    4 oz can mild green chilies
    15 oz can reduced sodium black beans
    8 oz frozen corn
    1/4 cup chopped fresh cilantro
    1 3/4 c unsalted chicken broth
    3 scallions, chopped
    3 garlic cloves, pressed or minced
    1 tsp onion powder
    1 tsp cumin
    1 tsp cayenne pepper (to taste)
    1/2 t kosher salt (to taste)

Directions

Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic, onion powder, cumin, cayenne pepper in the crockpot. Season chicken breast with salt and lay on top. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning. Serve over rice (not included in nutritional information.)

    Very Good
    Used organic black beans and broth....my family loved it on tortillas and I made it into a taco salad over mixed greens. Fresh pico for dressing made it a very yummy, healthy option. 15 minutes of work, tops! Great for a busy family who loves Mexican food, but doesn't need the usual fat/cals. - 9/16/13

    Made this Minus salt and I used Fat Free Vegetable Broth (one can), fresh onion, and garlic it is AMAZING! I had mine mixed in with my lettuce. Very good!!! - 1/24/12
