Introduction

A faux Indian inspired dish.
Stirring the sour cream in at the end makes a wonderful creamy tomato sauce.

You could cut down on the fat by substituting plain nonfat or lowfat yogurt or low or nonfat sour cream for regular sour cream.

Great with a glass of hearty red wine!

Ingredients

    Marjoram, dried, 1 tsp
    Cauliflower, raw, 2 cup
    Garlic, 6 small cloves
    Onion, 1 small
    Soy Sauce, 1 tsp
    cardamon spice, ground, 1 tsp
    red potatoes, 5 small
    Garbanzo Beans, 2 cup
    Ground tumeric, 1 tbsp
    Red Chili Pepper Flakes, 1 tsp
    Trader Joes Whole Peeled Plum Tomatoes, No Salt, Plus Basil, 3.5 cup can
    Grape Seed Oil, 2 tbsp
    Vegetable Broth, 2 cup
    Curry Paste, Green, 2 tsp
    Sour Cream, 2 tbsp/serving
    Cilantro, chopped to garnish
    Lemon wedge/serving

Directions

Chop onions into a small dice and mince garlic.
Saute in the bottom of a soup pot in grape seed oil at medium heat.
Add chili flakes, turmeric, cardamon, and saute a minute more.
Add beans, cauliflower and potatoes chopped into 1/2 inch cubes.
Stir all well.
Add tomatoes and broth and mix all, adding curry paste.
Let simmer open until caulifower and potatoes are done, about 20 minutes, stirring occasionally.

Makes 4 servings.
Serve in shallow bowl garnished with lemon juice, cilantro and 2 Tbsp sour cream.

    Very Good
    Very good! I just about followed the recipe, except for making 1/2 recipe, peeling and chopping my own fresh Italian plum tomatoes, using potatoes from the local farmers market
    (which took more than 20 minutes to cook), and garnishing with non-fat Greek yogurt instead of sour cream.
