Ingredients

2 1/4 c vital wheat gluten
1/2 c nutritional yeast flakes
1/4 cup chickpea flour
2 T Bills Best Chik'Nish Seasoning (if using another brand, omit the salt listed below)
2 T granulated onion
1 to 2 t fennel seed, optional
2 t ground pepper
2 t ground paprika
1 t chili powder
1 t smoked paprika
1/2 t gried oregano
1 t salt
1/8 t ground allspice
2 1/4 c cool water
6 to 8 cloves garlic, minced or pressed
2 T olive oil
2 T soy sauce
Directions
1. In a large bowl, mix together all of the dry ingredients. Whisk together the water, garlic, olive oil & soy sauce. Using a fork, gently stir the wet ingredients into the dry just until all are mixed. If dough mixture is too dry, you can add another tablespoon of water or as needed..
2. Scoop 1/2 cup dough mixture at a time onto a piece of aluminum foil, form into logs & roll up, twisting ends. Place sausages in the oven & cook at 325F for 30-40 mins. When cooled, remove from foil & refrigerate until ready to eat. Freeze any that may not be eaten within a week.
NOTE: You can shape dough into little patties instead of links.
