Ingredients

    1/2 lb ground beef, extra lean
    10 reduced fat ritz-crushed finely
    onion powder-dash
    oregano -1/4 tsp
    garlic italian seasoning 1/4 tsp
    3 oz. shredded mozzarella-low fat
    3/4 c. marinara
    3 whole wheat ciabatta rolls, split in half
    3/4 onions, sliced
    3/8 c. sliced red or green bell peppers
    1 tsp. olive oil

Directions

Heat olive oil in skillet. Add onions and peppers, sweat until they are tender- approx. 10 minutes.
Remove from pan and set aside.
Combine seasonings, cracker crumbs and meat.
Form into 15 equal sized meatballs. Heat pan add nonstick spray if necessary. Brown meatballs, cover and cook until no longer pink.
Warm bread. Place 1/4 c. onions and 1/8 c. pepers on each bottom slice. Top with 5 meatballs. Top with shredded mozzarella and 1/4 c. marinara sauce. Top with remaining bread. Serve warm
Each sandwich is 1 whole wheat ciabatta, 5 meatballs, 3 ounces cheese, 1/4 c. marinara, 1/4 c. onions ans 1/8 c. peppers.
