A quick easy fix with ingredients often found in my kitchen. My son loves it too! If I am low on my numbers for calories, carbs and fats for the day I usually indulge in this one! A quick easy fix with ingredients often found in my kitchen. My son loves it too! If I am low on my numbers for calories, carbs and fats for the day I usually indulge in this one!

Ingredients

    3 slices bacon uncooked
    Pam butter flavor cooking spray
    1 stick unsalted Butter at room temperature
    3 egg yolks
    10 tablespoons Parmesan Cheese
    1 package uncooked Pasta of choice
    1 - 3 tablespoons of milk as needed for sauce

Directions

Coat frying pan with Pam spray and cook bacon. When bacon is finished, cut and set aside. Sauce will need to be ready before pasta is completed for it to cook correctly. For Sauce: Combine one stick (8 tbspn) of cooled off but melted butter, parmesan or romano cheese (your choice) and egg yolks until creamy. Sometimes I might add a few tablespoons of fat free milk if I need to make it creamier, but for the most part mine is always a bit lumpy. Add black pepper as desired. When pasta is finished boiling, strain quickly and return to pot (leave a small amount of water in pasta. Add bacon to pasta, and add sauce to pasta. Stir until rich and creamy but do not add more heat. Heat from pasta should cook sauce to perfection. Serve Immediately. I normally start cooking the bacon and boiling water for pasta, then I make the sauce while the pasta is boiling - it all comes together in about 20 minutes tops.

    Yummy! I used turkey bacon and cut the butter in half and it was delicious! The kids even liked it! I had my serving with a big heap of frozen spinach. - 8/18/11
