Ingredients

    Black-eyed peas, cooked, 3 cups
    Brown Rice, cooked, 3 cups
    2 medium onions
    Green pepper - 1/2 cup
    4 cloves of garlic
    2 cans of diced tomatoes (no-salt)
    ORegano - 2 tsp
    Cayenne pepper - 1/2 tsp, or to taste

Directions

Add all ingredients except rice to pot. Bring to a boil, and simmer for 15 minutes. Add cooked brown rice and cook for 10 minutes.

    Very Good
    I don't quite understand how you can bring solids to a boil--I had to add about 3/4 to 1 cup of water to avoid burning. I used fresh tomatoes and a jalapeno pepper instead of bell pepper, and I think it turned out rather well. - 6/6/13
